The story
Aria, at 1 Macquarie St in Sydney, is a seasonal Australian restaurant that holds the 1 Radish from the Smart Green Guide (2026). The menu is built on Australian produce, and seafood is sourced from Australian waters.
Executive Chef Tom Gorringe leads the kitchen and works closely with Matt Moran. Owners Matt Moran and Bruce Solomon share the vision for the restaurant. The Australian kitchen cooks to the season, so dishes change with what growers and fishermen bring in.
Recent menu items include wild caught coral trout with heirloom spinach, romanesco and lemongrass, and dry aged duck with beetroot, blackberry and thyme. Kinross lamb arrives with eggplant, pepperberry and caper. Diners can choose a three course selection, or a five or eight course tasting menu that follows the stories of its producers. Groups of eight or more dine on the eight course menu.
The dining room is art-filled and looks out over the Sydney Opera House and Sydney Harbour Bridge. The wine list is designed to pair closely with the food, drawing on Australian producers and beyond.
