The story
Ardor, at 45 Fore Street in St Ives, is a Mediterranean restaurant that The Good Food Guide lists as Good for 2026. Chef patron Dorian Janmaat builds the menu around pintxos, tapas and charcoal-grilled dishes that draw on Cornish produce.
Dorian Janmaat was born in Amsterdam and spent much of his childhood in Spain before moving to Cornwall as a teenager. He spent nine years at Le Manoir aux Quat'Saisons in Oxfordshire, rising to head chef, and returned to Cornwall in 2020. Ardor is his first restaurant of his own, and its food draws on the Mediterranean and Iberian Peninsula. Michelin has given the restaurant a Recommended mention for 2026.
The croquetas arrive crisp and seasoned, topped with wafer-thin jamón. The calamari comes with burnt lemon and a roasted garlic aïoli. The Josper grill handles the dry-aged cuts and chicken souvlaki, which is finished with apricot harissa. The daily specials might include whole wild black bream with Jersey Royals and tarragon beurre blanc.
The dessert list follows the Iberian theme, with crema catalana served alongside almond biscotti and cinnamon churros with chocolate sauce. The wine list is curated, and the cocktails are designed to pair with the food.
