The story
Dill is a seasonal restaurant at 2 South Street in Lewes, East Sussex, and holds a Michelin Bib Gourmand for 2026. The inspectors credit its good quality, good value cooking, which arrives as small plates and boards built for sharing.
Chef Dan Cropper opened Dill in 2022 on a South Street site that once housed timber yards and cement works. The menu changes with what nearby farms deliver, and dishes reach the table as they are ready. Blackboard menus keep the room informal.
Oysters come raw with Tozasu, negi and wasabi tobiko, or grilled with beef fat hollandaise. Among the plates, roast sea trout is paired with crab, cucumber, caviar and sorrel, and a glazed ox tongue crumpet sits with pickled cockles and samphire. Salt-baked celeriac with confit egg yolk covers the vegetable side. The Good Food Guide (2026) picked up on the nose-to-tail streak in this modern European kitchen.
The wine list leans toward low-intervention bottles, and local breweries supply the beer, a nod to Lewes's brewing tradition. Desserts follow the seasons too, such as rhubarb parfait with white chocolate and ginger, or beetroot panna cotta with buttermilk and mint.
