The story

Stiva Grischuna in Laax: Bündner Cooking with Gault&Millau 13 (2026)

Stiva Grischuna is a Bündner kitchen in Laax, at Via Cavardiras 3 in Disentis, and Gault&Millau awarded it 13 points for 2026. The restaurant occupies a house more than 300 years old, with wood-paneled rooms and cooking that stays close to Graubünden roots.

Chef and cooking style

Flurina and Michael Häsch-Maissen run the restaurant. Michael adds small inventions to the traditional repertoire. His vitello tonnato uses lightly cooked game meat with a smoked trout sauce, finished with herbs and dried flowers. The wine list is knowledgeably chosen, and the service is warm.

Regional classics and dessert

Capuns, Pizokel, Maluns and polenta anchor the menu, and the Bündner specialties Bizochel and Raviuls appear on the website. A tender beef goulash stroganoff with crisp vegetables follows Father Maissen's recipe. The Michelin Guide lists the restaurant as a Bib Gourmand for 2026, citing good-quality, good-value cooking. A honey parfait with glazed apple wedges and diced mango closes the meal.

The culinary offering by Flurina and Michael Häsch-Maissen fits perfectly into the over-300-year-old Bündner house in the heart of Disentis, complete with its wood-paneled rooms. The menu prominently features classic dishes that are certainly not low in calories, such as Capuns, Pizokel, Maluns, and polenta. Yet Chef Michael also introduces some unexpected twists. For instance, he presented a variation on vitello tonnato featuring lightly cooked game meat accompanied by a rich smoked trout sauce, elaborately garnished with herbs and dried flowers. Next came brasato ravioli with unusually thick pasta, where the excessively lavish garnish of flowers and herbs failed to add any real value this time around. A traditional and well-executed dish was the tender beef goulash stroganoff with crisp vegetables, prepared according to Father Maissen’s recipe. To finish, a masterfully crafted combination of honey parfait with glazed apple wedges and diced mango provided a fitting conclusion. The wine list is knowledgeably curated, and service is exceptionally warm and friendly, courtesy of hostess Flurina and the local staff.
