The story
Krone, at Sihlbrugg 4 in Sihlbrugg, Switzerland, runs an Asian-leaning kitchen rooted in classic French technique and earned 16 points from Gault&Millau in 2026.
Thomas Huber cooks from a classic repertoire but takes regular detours. His vitello tonnato strays from the original, with tomato and tomato foam beside Balfegó tuna, veal fillet and thin, crisp focaccia. Each morning he smokes a roastbeef for two to three hours, then serves it with a bean stew and a smoky dark béarnaise that includes cherries.
The Wiener schnitzel comes with house-made noodles, and the Zurich-style veal stew is a regular. The Café de Paris is cut from Jumi beef, and the sea bass is baked in a sea salt crust. Vegetables come from the Enikerhof in Cham, which supplies even the tiny cucumbers. Monika Jans rolls out the cheese trolley at the end of the meal, timing each cheese's ripeness and sourcing from producers she knows well.
Monika Jans also oversees the cellar, which leans heavily on Swiss wines. The kitchen offers alcohol-free drinks designed to match the food, and the Michelin Recommended listing for 2026 sits alongside them. In summer, service moves to the garden under old trees. The small boutique hotel and the Chef's Table, which seats guests in the kitchen, round out the house.
