The story
Fahr, at Grossacherweg 1 in Herzogenbuchsee, is a contemporary restaurant holding one Michelin star (2026). The kitchen pairs regional produce with global influences, and the riverside setting near the Reuss gives the meal its character.
Manuel Steigmeier runs the kitchen and writes a menu built on careful sourcing. Gault&Millau praised the Lostallo salmon, cured for 40 minutes, frozen, lightly torched and served in an intense dashi. An open raviolo with sautéed porcini and chanterelles under the pasta sheet shows the more playful side, and the cheese course is a mini fondue.
The restaurant offers several spaces, including the Fahrhalle, the Fahrstube, the wine cellar and a garden for warmer months. The wine list is entirely Swiss, and the cellar keeps growing. The entrance is barrier-free, and there is a play area for children.
