Restaurant Hôtel de Ville, at Grand-Rue 6 in Founex, serves modern seasonal cuisine under chef Frédérik Kondratowicz. Gault&Millau gave it 16 points in 2026.

The kitchen

Kondratowicz has cooked here for more than twenty years. Gault&Millau describes his food as original and generous. The Michelin Guide also lists the restaurant as recommended for 2026. The summer 2026 menu follows the market and has a vegetarian version. A lunch menu of starter, main and dessert costs 38 francs.

On the plate

The Gault&Millau review singles out sea bream steamed over Breton seaweed, with wild shrimp, pepper emulsion and fava beans. Pré-salé lamb comes with a lemony jus and garlic confit. Dessert turns on raspberries in several forms, among them a basil sorbet and a tartlet of dark chocolate and green Chartreuse. Landais duck foie gras, scented with old Fine Bois cognac, is sold by the cut at 25 francs per 100 grams.

Art and wine

Pictures hang on the walls, books lie on a grand piano, and jazz plays low. The house runs a "Resto d'art" programme of rotating exhibitions, with paintings by Christine Wick through July 2026. Gault&Millau praises the wine list for its by-the-glass selection and biodynamic crus, and notes attentive, friendly service.

In the magnificent Hôtel de Ville, the Breton Grégory Halgand presents a seasonal four-course surprise menu, served by his charming wife Audrey Feutren-Halgand, offering classic French cuisine with a contemporary interpretation. The amuse-bouches are served in two rounds, first cold and then warm. For the cold course, there is a sablé atop green asparagus, cauliflower prepared as a mousse and julienne with a touch of caviar on green apple, and an Aperol jelly with duck liver sandwiched between paper-thin pretzels. The warm round features two cromesquis: one filled with a fondue of Fribourg Vacherin cheese, and the other stuffed with snails and wild garlic persillade. A superb start to the menu showcases white asparagus, asparagus mousse, and asparagus gel, paired with tangy rhubarb pickles and a pepper jus. The chef then garnishes the turbot, wrapped in a rich ballotine, with a delicate scampi, serving it alongside beurre blanc, potatoes, nori seaweed, and mandarin gel. The tender veal rack, aged on the bone, comes with a robust jus, accompanied by a heavenly tartlet made with whole peas, pea purée, and black garlic. A mara des bois strawberry sorbet and a pretzel filled with vanilla woodruff cream provide an excellent finale. An exciting wine list featuring outstanding crus from the Chablais region.
