The story
Ai Torchi, at via dell'Annunziata 12 in Finalborgo, Finale Ligure, is an Italian kitchen rooted in Ligurian seafood. Michelin lists it as Recommended for 2026, and the menu shows why: fish and shellfish take the lead from the first course to the last.
Lobster and sea bass come with a cocktail sauce and toasted almonds. Gnocchetti are dressed with a sauce of cannocchie, the local mantis shrimp. Baccalà is served with Tropea onions caramelised in balsamic vinegar, which balances sweetness and acidity. Fish bought fresh for raw dishes is blast-chilled first, as the menu explains.
Dinner is served in a former olive press, the antico frantoio, where historic collections are kept on display. The staff pay close attention to detail, according to ilGolosario, which awarded the restaurant Faccino Radioso for 2026. Next door sits a separate osteria, the sister venue, with a more relaxed and informal feel.
The wine list moves from Franciacorta and Champagne to Burgundy, Friuli and Ligurian whites. Desserts include a babbà soaked in Pigato Passito with citrus cream, and a chocolate mousse with vanilla cream and chocolate foam. For a full evening, the kitchen offers a five-course tasting menu at 58 euros, chosen for the whole table.
