The story
Tin Lung Heen, at 1 Austin Road West in Kowloon, is a Cantonese restaurant that earned two Michelin stars for excellent cooking in 2026. It occupies the 102nd floor of The Ritz-Carlton, Hong Kong, in the ICC building.
The kitchen is led by chef Paul Lau, and seafood anchors the menu, with some dishes made from live selections. Traditional dim sum and premium tea sit alongside the main Cantonese courses. The seven private dining rooms serve the same refined cooking to parties of six to 48.
Floor-to-ceiling windows fill the room with daylight. The view faces west over Stonecutters Bridge, the port and the hills of Lantau, not the Hong Kong Island skyline. Forbes Travel Guide awarded the restaurant Five-Star status in 2026. The wine list runs to hundreds of references, with strong Bordeaux and Burgundy and a deep Italian selection that includes Gaja, Bruno Giacosa and Conterno.
