The story
KUNO 1408 is a modern Franconian restaurant at Neubaustraße 7 in Würzburg, Germany, and it holds one Michelin star for 2026. The fine-dining room occupies a Rococo building, and its kitchen blends regional roots with a cosmopolitan outlook.
Chefs Robin Hofmann and Patrick Grieshaber run a single menu of four to six courses. The dishes move between inspired classics and newer creations, often with Mediterranean or Asian accents. One course pairs cheese dumplings with Belper Knolle, oyster mushrooms and lovage. Venison arrives with chard, celery and cranberry.
The dining room has a postmodern interior and precisely lit tables. The wine list runs to about 120 selections, including bottles from Franconia, the rest of Europe and the New World. The site has operated as an inn and guesthouse since 1408, which gives the Franconian kitchen a long local history.
