The story
Söl'ring Hof, at Am Sandwall 1 in Rantum, is a French fine dining restaurant in Westerland that earned two Michelin stars for excellent cooking in 2026. The kitchen works with seasonal, product-focused ingredients on a dune above the North Sea.
Head chef Jan Fehling cooks alongside host Jan-Philipp Berner, and the menu changes with the year. The creations are light and precise. Texture and balance take precedence over richness, so each course feels distinct without weighing down the next.
Halibut arrives with beetroot and sweet woodruff, earthy and fresh at once. Salmon trout comes with pumpkin and roe for a gentler warmth. A ling and seafood stew with leek and caviar brings depth, and pigeon with young cabbage and blackberry adds earthy richness. The meal ends with "Rose Blossoms," a fragrant, light close.
The dining room is bright and contemporary, with an open kitchen and service that is professional but warm. Restaurant manager and sommelier Bärbel Ring curates the pairings from a list of 800 selections. The restaurant sits within a five-star hotel on the dune, which has 15 rooms, maisonettes and suites.
