The story
Brunnenstuben, at Quellenstraße 14 in Waiblingen-Beinstein, serves Swabian country cooking with international influences. The Michelin Guide listed it as Recommended in 2026.
Thorsten and Petra Beyer have run the restaurant since 2011. The kitchen works mostly with regional, seasonal produce and rewrites its tasting menu as the seasons turn. The Schlemmer Atlas gave it 2.5 Kochlöffel in 2026 and describes a place where everything is homemade. Guests mention spätzle and schupfnudeln made in-house, as well as venison and fish cooked precisely.
The list leans on growers from the Remstal and Württemberg, with a smaller selection of national and international bottles. Thorsten Beyer and Thomas Rücker choose the wines themselves to suit the seasonal dishes. A wine pairing is available with the menu.
Every Sunday from 16.00 to 18.00, the kitchen offers a four-course surprise menu for 60 euros. Vegetarians and guests with allergies can ask for adjustments when booking. Several dining rooms host christenings, weddings and company dinners, and in good weather the terrace is open.
