The story
Schattbuch is a modern cuisine restaurant in Wangen, at Schattbucher Straße 10 in Amtzell, and it holds one Michelin star for 2026. The kitchen works with market-fresh produce, and the menu changes with the seasons.
Caio Benati leads the kitchen, which sources many ingredients from the surrounding region. The Tettnang hop-growing area lies close by, and hops appear across the menu. A salad of radishes, carrots and melon comes with hop dressing, using vegetables from Biohof Schauwies.
Smoked organic pork is served with French beans, rosemary potatoes and a pale ale jus. The vegetarian menu includes kohlrabi with chard, chanterelles and beetroot. The kitchen focuses on high-quality vegetarian and animal products, and it does not currently offer a fully vegan menu.
Large windows fill the dining room with daylight, while natural stone walls and tables dressed in white linen keep the mood relaxed. The wine list holds more than 600 labels, with 12 available by the glass. The venue also runs a two-floor event space of around 500 square meters.
