The story
Restaurant AMI operates inside the Löwen design hotel at Klosterhof 41 in Ulm, where its European kitchen earned 3 Kochlöffel in the Schlemmer Atlas 2026.
Chef David Probst cooks two seven-course menus, one of them vegetarian, alongside a short à la carte card. The carte keeps classics such as beef roast next to more inventive, modern plates.
The restaurant occupies a modernized listed building that was part of a Klarissen convent dating to 1258. Der Feinschmecker rated it 2.5 in 2026 and described a lively room of wood and glass. Its cooking leans on contrast, from cured salmon with trout roe and seaweed chip to a galantine of chicken and duck breast with a core of goose liver.
