The story
Kaupers Restaurant im Kapellenhof, at Kapellenstraße 18a in Selzen, holds one Michelin star (2026) for its French and modern cooking. Sebastian Kauper runs the kitchen, and Nora Breyer hosts the evening.
Kauper's credo is the art of leaving out, with reduction and a focus on what matters. The menu runs five to seven courses and leans on regional ingredients. Grilled salmon trout arrives with local ancient grains, pickled cucumber and pickled ginger. Chamois sausages are paired with oven-roasted onions, black mustard cream and lingonberries. For dessert there is a nougat savarin, rich and full-bodied, with wild blueberries, Piedmont hazelnuts and nougat cream.
The dining room is a stylishly renovated former barn on the edge of the village, about 20 minutes by car from Mainz. The Schlemmer Atlas awarded it three Kochlöffel in 2026. Stately wooden beams run overhead, and in summer the large terrace is dressed to suit the season. Nora guides guests through the evening with plenty of humour. The wine list focuses on German bottles, with a few from France and Italy and a small selection of natural wines.
