The story
Hofgut Hohenkarpfen, at Hohenkarpfen 1 in Hausen ob Verena, sits on the Baar plateau between Seitingen-Oberflacht, Gunningen and Hausen ob Verena. Its restaurant serves an international kitchen with a regional streak, and the Michelin Guide listed it as Recommended in 2026.
Head chef Stefan Schäfer leads the kitchen. The cooking pairs regional produce with a modern, international flair, and the restaurant says fresh ingredients meet techniques that turn classics into small works of art. Many guests from Rottweil, Spaichingen and Tuttlingen choose it for dinners with international business partners.
The winter menu has included parsley root soup with vadouvan and scallops, pike-perch with leek ragout and tarragon gnocchi, and Bavarian duck breast with pickled red cabbage and citrus purée. A vegetarian menu runs alongside it, with caramelized goat cheese and porcini ravioli. For dessert, the kitchen has offered a Callebaut chocolate variation with white mousse and peach sorbet.
The dining room seats 60, and the terrace seats 90 with views over the Swabian Alb and the Donaubergland. A historic vaulted wine cellar supplies the bottles poured with the meal. The Schlemmer Atlas, which awards 2.5 Kochlöffel for 2026, praises the setting and the exquisite menus and à la carte dishes.
