The story
Landgasthof Hirsch Gächingen serves Swabian kitchen cooking at Parkstr. 2 in Sankt Johann, Germany, and it holds a 1.5 Kochlöffel rating in the Schlemmer Atlas 2026. The family has run the inn for 260 years, and the dining rooms are spread across six separate stuben instead of one hall.
Chef Kay Kahlau leads the kitchen, which pairs traditional Swabian dishes with produce from the Alb region. Most of the meat comes from the family's own butcher shop next door, and game comes from local hunting. Many dishes follow family recipes, and the menu also includes a set lunch.
Each room suits a different occasion. The Albbüffelstube seats up to 24, the Schäferstube up to 40, and the Metzgerstube, the smallest, suits an intimate dinner for six. Guests describe the rooms as rustic yet modern, and most are wheelchair accessible.
