The story
Kulinarium, at Friedrichsplatz 4 in Röthenbach an der Pegnitz, serves seasonal French cooking and was listed as Michelin Recommended in 2026. The restaurant occupies a half-timbered building in the Nürnberg region, and chef Gerald Hoffmann builds each menu around classical French technique.
Hoffmann cooks with the seasons and with ingredients from nearby producers, which keeps the menu tied to what is local and fresh. The menu runs to four, five or six courses. The Schlemmer Atlas awarded the restaurant three Kochlöffel in 2026 and described the cooking as unfussy and high quality.
The menu has included cured lake trout with horseradish cream, cucumber and apple, finished with N25 Umai Heritage caviar. Cod is cooked gently and served with Franconian lentils and a mussel sauce. Other plates have featured saddle of wild hare, roasted pink, with salsify and pear chutney, and veal braised and paired with grilled romaine and gremolata. Dessert might be a blood orange sorbet with Campari, white chocolate ganache and tarragon oil, or a cheese selection from an Erlangen affineur. Vegetarian alternatives are available if you arrange them in advance. Vegan and milk-protein-free menus are not offered.
The dining room keeps its historic beam ceiling and has been modernized with restraint. The wine list leans toward Germany, with a particular focus on Franconia, the Palatinate and Baden, and wine pairings can be added to the menu. Groups of five to ten can book a session at the kitchen counter, where Hoffmann walks guests through the preparation of the evening's courses.
