The story
HIO sits at Hilzhofen 18 in Pilsach, near Neumarkt in der Oberpfalz, where the Bavarian kitchen cooks with vegetables and herbs from its own fields. The Michelin Bib Gourmand (2026) recognises good-quality, good-value cooking in a Wirtshaus that the same family has run since 1868.
Domenico Gigliotti leads the kitchen, and the six-course menu is built on produce picked to order from the fields and woods outside. Fish and meat come from the immediate area, and the wine list leans toward Germany and Austria with many organic bottles. One course is char tataki seasoned with Ras el Hanout, crisp skin sharpened with harissa and a light saffron beurre blanc. Schlemmer Atlas awards 3.5 Kochlöffel (2026) and suggests planning about three hours for the meal.
The rooms combine rustic Bavarian Stuben with cooler Nordic styling: black oak tables, a white hydrangea installation and a graffiti wall. Guests sit close enough to the stove to watch plates being finished, which keeps the room lively. The kitchen also serves more traditional plates, including schnitzel and vegetable curry.
