The story
Admiral in Herxheim am Berg serves contemporary fusion cooking at Leistadter Straße 6, and the Michelin guide awarded it one star in 2026 for its high quality cooking. The restaurant sits along the Palatinate wine road, in a historic country house.
Holger Stehr builds his dishes on a French foundation and draws on flavors from around the world. Der Feinschmecker describes a touch of crossover in most plates, sometimes classically French and sometimes regionally inspired. The kitchen puts product and clear flavor first, and it stays open to aromas from further afield.
The printed menu lists hamachi cured and paired with roasted leek vinaigrette and cucumber, and French foie gras terrine with coffee and quince. Canadian lobster arrives with kohlrabi, yuzu and Thai basil, while wild sea bass comes with salted lemon escabeche and bottarga. Guests can choose between five and eight courses, and Der Feinschmecker notes Norwegian langoustines with a Japanese-style bouillabaisse.
Schlemmer Atlas places the restaurant in an 18th-century hunting lodge in the town center, with a cozy inn feel and modern accents. Sommelier Martina Stehr keeps a wine list of more than 400 positions, weighted toward regional bottles with international classics beside them. The single guest room sits in the sandstone pavilion next to the restaurant.
