The story
Joseph Naus Stub'n serves Bavarian cooking at Klammstr. 19 in Garmisch-Partenkirchen, inside the Hotel Zugspitze. The Michelin Guide has recommended it for 2026, and the dining room sits in the town center, just left of the hotel entrance.
Chef Georg Strohmeyer buys from suppliers he knows personally, including a nursery in Ohlstadt for vegetables. Sea fish has left the menu in favor of Renken, trout and Zander from the Walchensee and other Upper Bavarian and Tyrolean lakes.
The kitchen cooks over a charcoal Green Egg grill, where Murnau Werdenfelser beef comes with pea purée and mountain cheese fritters. Other dishes on past menus include calf tartare from the Ammergau, Wiener Schnitzel made with Bavarian veal, and homemade Baumkuchen.
