The story
Masa Japanese Cuisine, at Hanauer Landstraße 131 in Frankfurt am Main, is a contemporary Japanese kitchen that holds one Michelin star (2026). Chef Masaru Oae builds his menus around omakase service, with European techniques and ingredients woven into Japanese cooking.
Oae began his career at YASHIN Sushi and Bar in London, then worked at BASHO-AN in Freiburg, where he refined kaiseki. He later cooked at NAGAYA in Düsseldorf and led the kitchen of its sister restaurant, YOSHI by NAGAYA. His approach keeps Japanese attention to detail and natural ingredients, balanced with selected European methods.
The omakase runs up to nine courses, and a shorter menu is available without caviar and fish. Sashimi and sushi come in four varieties. Toriyama Wagyu can be ordered as a main course for an extra charge. Sake is offered as a pairing alongside German and French wines, except with the sweet finale.
