The story
Carte blanche, at Egenolffstraße 39 in Frankfurt am Main, is a modern cuisine restaurant with no printed menu. Der Feinschmecker gave it 3 in 2026, and the kitchen plans each evening around what the market brings.
Owner and head chef Sebastian Ziese buys fresh, seasonal produce, mostly from the region, and settles the menu from that day's purchases. The website lists a six-course surprise menu at 118 euros, while the Feinschmecker guide describes four to six courses. Guests who want wine pairings can choose between two options.
Bread, sausages and ham are made in-house. Vegetables and fruit come from fields in Oberrad, and potatoes, eggs and some meat come from a farm in Bad Vilbel-Gronau. Recent purchase notes on the website mention venison from the Rheingau, scallop with hazelnut and black truffle, and skrei.
The dining room has high ceilings and stucco moldings, and the mood is cozy and unhurried. The wine list leans toward organic bottles from Germany, Italy, France and Austria, with a broad champagne selection and non-alcoholic options such as mountain apple juice.
