The story
Einhorn in Backnang is a Swabian and classic cuisine restaurant at Hauptstraße 55 in Oppenweiler, with rooms attached to the same historic house. The Schlemmer Atlas awarded it 2,5 Kochlöffel for 2026, and the kitchen is run by Alexander Munz and Jan Decker.
Munz and Decker build the menu around seasonal, market-fresh produce, and the house describes its cooking as cosmopolitan with regional roots. Its motto, "Neues aus der Welt, Gutes aus der Heimat" (new from the world, good from home), sums up the approach. Michelin lists the restaurant as Recommended for 2026.
The classic is Swabian Zwiebelrostbraten with Lemberger sauce, served with Maultäschle and hand-scraped Spätzle. Other mains on the card include duck prepared two ways, sous vide breast with a crisp leg, and Skrei winter cod from the Lofoten served on kale with butternut squash. Desserts draw on pastry from Ute Wagner-Munz, including a pistachio and sea buckthorn plate and a pineapple, hazelnut and coffee dessert.
The guesthouse opened in 1806 as a brewery and coaching station, and the brewers' star still appears on the building's sign. In summer, the courtyard garden under plane trees and a pergola is the place to sit. The wine lounge opens onto a wine cellar, and event rooms for 10 to 30 guests are spread over three floors.
