The story
Spelt is a modern cuisine and bistro restaurant at 6 Grand'Rue in Tourrettes-sur-Loup, France, recognised as Michelin Recommended in 2026. Chef Raphaël Grima and pastry chef Marion Luque-Bouvier run the kitchen in this village in the Nice backcountry.
Raphaël Grima built his cooking on classic foundations and adapts them with his own creativity, using fresh, local produce finished with a sauce and precise cooking. He worked in the Taillevent group in Paris and London as sous-chef and chef de cuisine. Marion Luque-Bouvier, formerly of Meurice and L'Atelier de Joël Robuchon, makes desserts that rely on the sugar already present in the ingredients.
The old building has been fully remodeled, with exposed stone walls and blonde wood tables. A terrace overlooks the steep valley below. The kitchen offers a seven-course tasting menu, with dishes such as spelt risotto topped with lobster and a white chocolate lemon dessert.
