The story
Les Fresques sits inside the Hôtel Royal at 960 avenue du Léman in Neuvecelle, Évian-les-Bains, where the modern cuisine menu has held a 2026 Michelin star. The dining room overlooks Lake Geneva, and the kitchen is led by chef Yohan Fatela.
Fatela, born in Grenoble, took over after twenty-five years under a single chef at the hotel. His cooking starts with produce, a habit he traces to his grandparents' farm garden. Seasons set the pace, and local artisans supply part of the menu alongside ideas gathered on his travels.
The ceilings were signed by Gustave Jaulmes, and a panoramic terrace opens onto the lake. Hot drinks are treated as a ritual, designed with aroma specialist Carine Baudry. Guests choose from rare teas and herbal infusions from the Royal's kitchen garden, served with an infuser and an hourglass for timing.
