The story
Moment is a modern cuisine restaurant at Ravnen 1 in Rønde, near Ebeltoft on Djursland, and the White Guide awarded it the Very fine level in 2026. Michelin lists it as Recommended in the same year. The restaurant sits at the entrance to the organic village Friland, inside the Mols Bjerge National Park.
The kitchen is vegetable based, and most ingredients come from the restaurant's own garden and farm. The team grows open pollinated plants and avoids F1 hybrids, reintroducing heirloom varieties and cultivating wild plants. Menus change with the season, so the dishes follow what the garden produces. Ingredients the garden cannot supply, such as oranges from Italy, are bought only when they are in season.
The building doubles as a demonstration site for sustainable technology, with straw bale walls and a smoke cleaner for the mass oven. The chairs are Danish design made from locally sourced wood. The plates are unglazed so they can be composted. A small forest garden outside the windows shows permaculture production, and condensate from the walk-in cooler waters the edible table decorations.
The wines are natural, made from organic or biodynamic grapes, fermented spontaneously with zero or minimal sulfites. A separate drinks list offers homemade fermented drinks made with old cultures that produce little or no alcohol. The sister company Momentary Wine imports natural wines, and a small natural wine shop operates inside the restaurant.
