The story
Carcasse, at H. Christiaenlaan 5 in Koksijde, is a meat-led bistro that earned one Michelin star in 2026. It operates as an annex of the Dierendonck butcher's shop, so the cuts in the display case are the ones that reach the plate.
Timon Michiels runs the kitchen, and Le Fooding notes that he trained with Ducasse at the Louis XV in Monaco. The plates are deliberately plain: the steak arrives without sauce or fries, seared on the plancha in beef fat. Gault&Millau gave the restaurant 14.5 in 2026, citing the short chain from butcher to table.
Dry-aged beef from Holstein, Simmental, Wagyu, Hereford and Oedslach hangs where guests can see it. The mains include a filet pur Simmental de Bavière, a bavette 'West Flanders Red' with shallots, and a côte à l'os offered daily. Vegetables get real attention too, with charred leeks, fermented cauliflower and buttery Polder potato mousseline as counterpoints.
Tiled walls give the room the look of a luxury butcher's shop, and the wooden tables are set with Atelier 85 knives. A five-course chef's choice menu is served per table. Even the pralines carry the theme: they are made with lard and smoked lardo, developed with a friend at Chocolate Line in Bruges.
